Tofu and rice noodles may sound boring to some, but you can turn them into something scrumptious with a few simple ingredients.
INGREDIENTS (For all ingredients, please use organic versions if available)
For the Tofu Kabob with Peanut Sauce, the ingredients are: 1 block of firm tofu, Olive oil, 3 cabbage leaves (optional)
Peanut Sauce: 1 tablespoon of peanut butter (chunky or smooth), 1 tablespoon of soy sauce, Hot water, Finely chopped coriander (optional)
For the Vegan Fried Rice Noodles, the ingredients are: Rice stick noodles, Olive oil, Dried shiitake mushrooms, Cabbage, Coarsely chopped coriander, 1-2 tablespoons of soy sauce, Black pepper (optional) Tofu or vegan ham (optional)
